4slicesbaconBanj's Bacon cut crosswise into 1 cm pieces
2tsp.Canola oil
2lbsBrussel sproutsshaved thin
1/3cuplemon juiceapprox 1 lemon
2cupsGrana Padano Parmesanfinely grated
Salt and pepper
Instructions
In a large pot, render the bacon until crispy, and remove from pan, leaving the fat in the pan.
Add the canola oil to the bacon fat in the pot and heat on high until almost smoking.
Add shredded Brussels Sprouts, and stir vigorously with a wooden spoon for 2-3 minutes. They will sizzle and pop; this is why you are using a large pot.
Remove from heat and return bacon to the pot.
Add lemon juice and sprinkle in Grana Padano while stirring, reserving a little for garnish.
Taste and correct seasoning with salt and pepper. Garnish with reserved Grana Padano.
Serve immediately.
Notes
If you find most of the side dishes at Thanksgiving to be quite heavy, this would be a nice one to add to the mix.
