Slice your cucumber to create two pieces - one for the top of the hat and one for the brim.
Secure together with a toothpick.
Dab on agave nectar at the point where the brim and top of the hat meet. (I used a chopstick to do this).
Pour chia seeds over top of the nectar and fine-tune with a toothpick.
Pop in the top of a straw to garnish your St.Patrick's Day drink!
