Pour about a cup of mini eggs into a big Ziploc bag and crush with a rolling pin.
Preheat your waffle iron. In a large bowl, whisk flour, sugar, baking powder, and salt.
Whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
Gently stir in crushed Mini Eggs and cook your waffles according to your waffle maker's instructions.
Top with Cool Whip, a few more Mini Eggs, and pastel Easter sprinkles. Drizzle with syrup if your heart desires.
