Watch your kiddos go bananas when they see Mini Egg waffles!
So easy to make, and so delicious!

Mini Egg Waffles-1

I honestly can’t believe we haven’t tried this recipe until now! Like you I’m sure, irresistible Mini Eggs are a staple in our house this time of year. Don’t you get excited when you finally see them in the store?! I sure do!

I originally planned to whip up some pretty, pastel waffles to kickstart your Easter inspiration, but I’m still perfecting that recipe. In thinking of Plan B, I started to experiment with Mini Eggs. I used my favourite waffle recipe ever – Easy Waffles from Martha Stewart – and added in a few extra treats! For the base of the recipe, I use oat milk instead of cow’s milk. I will say, there’s definitely a method to making sure these Mini Egg waffles turn out.

Mini Egg Waffles-2You’ll Need:

  • one cup all-purpose flour
  • two tbsp sugar
  • one tsp baking powder
  • 1/4 tsp salt
  • one cup oat milk
  • two large eggs
  • Four tbsp (1/2 stick) unsalted butter, melted
  • One big bag of Mini Eggs
  • pink cotton candy
  • pastel sprinkles
  • Cool Whip

Mini Egg Waffles-3

Directions:

Step #1

Pour about a cup of mini eggs into a big Ziploc bag and crush with a rolling pin. This is key! The waffles won’t turn out as nice if you plunk the mini eggs in there whole.

Step #2

Preheat your waffle iron. In a large bowl, whisk flour, sugar, baking powder, and salt.

Step #3

Whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don’t overmix). Gently whisk in butter.

Step #4

Gently stir in crushed Mini Eggs and cook your waffles according to your waffle maker’s instruction.

Step #5

Top with Cool Whip, a few more Mini Eggs, and pastel Easter sprinkles. Drizzle with syrup if your heart desires.

Ingredients

😭 I'm having a hard time with this one.  I kn 😭 I'm having a hard time with this one. 

I know - bust out the 🎻 - but seriously. I've had some good cries this week as we start to pack up and get rid of some of our baby stuff. Most of it we've had since Wyatt came on the scene.

It hurts to know this baby-making chapter is closing and the last jump in the jolly jumper is over and I'll never be pregnant again.😭😭 Of course, I'm excited for everything ahead but this is hard on the heart. Been here? You feel this?

You know what drains a kid's emotional cup - being overscheduled. We've lived it and I'm here to say it's SO MUCH BETTER on the other side.

📍Last year, our goal was to give our oldest (now 8) every opportunity to try things to figure out what he loved. His schedule was packed with activities (I realize this is a privileged point). We were running - sometimes literally - from school to activity every night of the week and on weekends.

📍Fast-forward to this year - he has so much more time to just be a kid and we're all happier! He's picked a couple of things he's passionate about, but we've cut so much out and now most of our after-school time is open. Maybe we'll run an errand, maybe we'll come home and hang out, maybe we'll play at the park with friends and get ice cream. 

✨️ If one day he decides he wants to pour more time into one of his passions - we support that, but for now this is it and it's awesome!
