Bacon Cheddar Muffins

I love waking up early on Christmas morning and tip-toeing downstairs to get started on making these delicious muffins. With the ingredients prepped the night before (more on that further down in the post), I first sit and have my latte by the tree. Then I fire up the oven so these beauties are baking just as the rest of the house starts to stir. The aroma of bacon and something freshly baked fills the house. There’s nothing quite like it.

My mom used to do the exact same thing for us when we were kids. That’s where I got this amazing recipe from (thanks, mom)!

Christmas Morning Bacon Cheddar Muffins-2You’ll Need

  • Two cups flour
  • ½ tsp salt
  • ¼ cup white sugar
  • 1 cup fried bacon chopped into 1/2 inch pieces (one whole package)
  • 1 cup of milk
  • 2 tsp baking powder
  • ½ cup soft butter
  • Two eggs
  • 1 cup grated cheddar cheese
  • 1 tsp dried basil (sweet)

  • Preheat the oven to 350 degrees.
  • Line 12 capacity muffin pan with paper baking cups
  • Sift together: flour, baking powder, salt, and basil
  • Beat: Butter with sugar until creamy.
  • Add eggs and beat well.
  • Gradually add in flour mixture and milk to batter.
  • Fold in bacon pieces and cheese
  • Fill muffins cups
  • Bake for 25-30 mins

Prep Ahead Tips

No one wants to be stuck in the kitchen for too long on Christmas morning. A good time-saver is to fry bacon, grate cheese and prepare dry ingredients on Christmas Eve and store separately in Ziplocs or containers in the fridge. Throw everything together and pop in the oven just before the house wakes up. The smell of delicious muffins as your family comes down to the tree is truly amazing.
