Caramelized Brussels Sprouts With Bacon

The first time I made this dish, I almost ate the entire bowl! It is SO good! The recipe comes straight from Freson Bros. Chef Alexei (Top Chef Canada). Freson Bros. is opening up it’s first Edmonton location in Rabbit Hill in March 2021. For now, we shop at their newest (and absolutely stunning) store in Fort Saskatchewan and often pop out to their Stony Plain location as well. They also have a dozen other stores in communities across the province.

If you find most of the side dishes at Thanksgiving to be quite heavy, this would be a nice one to add to the mix. It’s beautifully balanced between the bacon and the fresh lemon, and I have yet to meet a single person that doesn’t love this dish from the very first bite!

Caramelized Brussels Sprouts With Bacon-2

You’ll Need:

  • 4 slices of Banj’s Bacon cut crosswise into 1 cm pieces
  • 2 tsp. Canola oil
  • 2 lbs Brussel sprouts, shaved thin
  • 1/3 cup lemon juice (approx 1 lemon)
  • 2 cups Grana Padano Parmesan, finely grated
  • Salt and pepper

  • In a large pot, render the bacon until crispy, and remove from pan, leaving the fat in the pan.
  • Add the canola oil to the bacon fat in the pot and heat on high until almost smoking.
  • Add shredded Brussels Sprouts, and stir vigorously with a wooden spoon for 2-3 minutes. They will sizzle and pop; this is why you are using a large pot.

  • Remove from heat and return bacon to the pot.
  • Add lemon juice and sprinkle in Grana Padano while stirring, reserving a little for garnish.
  • Taste and correct seasoning with salt and pepper. Garnish with reserved Grana Padano.
  • Serve immediately.
