Loaded with fresh ingredients, this is my Dad’s Famous Chicken Taco Salad! So simple to whip up!
Here’s a quick and easy dish you can make today to celebrate Cinco de Mayo! My dad has been making this Famous Chicken Taco Salad for years and it’s absolutely delicious!
You can use any kind of diced chicken but I find that rotisserie tastes the best. This salad is best served right away because the tortilla chips can really soften. Here’s everything you’re going to need, plus how to put this together (there is a method so it turns out perfectly)!
You’ll Need:
- 1 ½ lbs diced rotisserie chicken
- ½ iceberg lettuce
- ½ lb grated cheddar
- Four or five green onions
- One cup French salad dressing
- One pkg taco seasoning
- Two chopped Roma tomatoes
- One green pepper, diced
- One bag of tortilla chips, crushed
- Diced cilantro
Directions:
- Prep all of your ingredients. Wash and pat dry (or spin) your lettuce.
- Place diced chicken, green pepper, green onion, tomatoes, cilantro and grated cheese in piles around a salad bowl.
- Put crushed tortilla chips into the middle.
- Sprinkle taco seasoning (straight from the package) over ingredients on the plate.
- Lay your lettuce on top of everything. (This will ensure your lettuce doesn’t get soggy).
- Then drizzle your salad dressing on top and toss your salad. Serve right away!

Dad's Famous Chicken Taco Salad
Ingredients
- 1.5 lbs rotisserie chicken diced
- 1/2 head iceberg lettuce broken up
- 1/2 lb cheddar cheese grated
- 4-5 green onions sliced
- 1 cup French salad dressing
- 1 package taco seasoning
- 2 Roma tomatoes chopped
- 1 green pepper diced
- 1 bag tortilla chips crushed
- 1 small bunch cilantro chopped
Instructions
- Prep all of your ingredients.
- Wash and pat dry (or spin) your lettuce.
- Place diced chicken, green pepper, green onion, tomatoes, and cilantro, alohg with your grated cheese in piles around a salad bowl.
- Set crushed tortilla chips into the middle.
- Sprinkle taco seasoning (straight from the package) over ingredients on the plate.
- Lay your lettuce on top of everything. (This is a great way to ensure your lettuce doesn't get soggy).
- Drizzle your salad dressing on top of everything and toss your salad. Serve right away!
