Watch your kiddos go bananas when they see Mini Egg waffles!
So easy to make, and so delicious!
I honestly can’t believe we haven’t tried this recipe until now! Like you I’m sure, irresistible Mini Eggs are a staple in our house this time of year. Don’t you get excited when you finally see them in the store?! I sure do!
I originally planned to whip up some pretty, pastel waffles to kickstart your Easter inspiration, but I’m still perfecting that recipe. In thinking of Plan B, I started to experiment with Mini Eggs. I used my favourite waffle recipe ever – Easy Waffles from Martha Stewart – and added in a few extra treats! For the base of the recipe, I use oat milk instead of cow’s milk. I will say, there’s definitely a method to making sure these Mini Egg waffles turn out.
You’ll Need:
- one cup all-purpose flour
- two tbsp sugar
- one tsp baking powder
- 1/4 tsp salt
- one cup oat milk
- two large eggs
- Four tbsp (1/2 stick) unsalted butter, melted
- One big bag of Mini Eggs
- pink cotton candy
- pastel sprinkles
- Cool Whip
Directions:
Step #1
Pour about a cup of mini eggs into a big Ziploc bag and crush with a rolling pin. This is key! The waffles won’t turn out as nice if you plunk the mini eggs in there whole.
Step #2
Preheat your waffle iron. In a large bowl, whisk flour, sugar, baking powder, and salt.
Step #3
Whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don’t overmix). Gently whisk in butter.
Step #4
Gently stir in crushed Mini Eggs and cook your waffles according to your waffle maker’s instruction.
Step #5
Top with Cool Whip, a few more Mini Eggs, and pastel Easter sprinkles. Drizzle with syrup if your heart desires.
