Lucky Leprechaun Smoothie

Healthy and delicious! Your kids will love this Lucky Leprechaun Smoothie loaded with good-for-you stuff!

lucky leprechaun smoothie-1Smoothies are the guaranteed way to get your kids their greens! Honestly, in our house, it’s the only way our little guy is eating any spinach. This Lucky Leprechaun Smoothie is really delicious and chock-full of nutrients.

I make a batch or two of this ahead of time and store it in the fridge to have for a few days. I love using big Kilner jars for this. If you want to make and drink right away, just add a bit of ice into the mix. Call it The Lucky Leprechaun around St. Patrick’s Day, or the Green Monster or Hulk Smoothie any other time of the year. 🙂

We’ll also be whipping up these yummy pancakes this St. Patrick’s Day.

  • one avocado
  • 1.5 cups of oat milk
  • ½ cup of coconut water
  • two Granny Smith apples
  • a big chunk of ginger
  • one big handful of spinach
  • juice from ½ lemon
  • agave nectar

  • Juice your spinach, oat milk, and coconut water.
  • Then, add in the rest of your ingredients.
  • If you want to drink this right away, blend some ice with it. Otherwise, pre-make ahead of time and pop in the fridge so it’s nice and cold.
  • Garnish with a cucumber leprechaun hat in a festive cup.
